Preheat the oven to 200°C. Drain and press the tofu, cut it into cubes. Put it in a bowl with the soy sauce and sesame oil, mix well, then place it on the oven tray covered with baking paper, cook for 20 minutes, until crispy.
Meanwhile, heat the olive oil in a saucepan, add the shallot, ginger, garlic, green curry, mix for 2 minutes.
Add broth, coconut milk, tamari sauce, bring to a boil, add snow peas, broccoli, cook until just tender. Check the seasoning.
Cook the ramen noodles according to the packet instructions then add them to the curry.
Put the tofu cubes in the curry and serve with the spring onion.
